It’s been quiet around Super Coupon Girl this week because I have come down with a particularly nasty flu. I’m taking this weekend to recoup, but things should be back to normal next week. In the meantime, I’m glad for all the free cold medicine in my stockpile!

Coupon Funded Menu Corner: Shepherd’s Pie

During my freezer cooking marathon, I started defrosting two packages of ground beef that I put to use in a Shepherd’s Pie:

This is a family recipe with no precise measurements, but here’s the gist of it:

I put the ground beef into a pan with a bit of olive oil and about 2/3 of an onion, chopped. I cooked it until brown, and then added one stock cube dissolved in two cups boiling water. I left it to cook a few more minutes, then turned off the heat and put it into a baking dish. Next, I parboiled two or three sliced carrots and layered them on top of the meat. Then I boiled some potatoes and used a handmixer to mash them with butter and milk, and spread the mashed potatoes over the meat and carrots. I then cooked this at 350 degrees for about 35 minutes. This was served with slices of homemade bread and butter – a must-have with Shepherd’s Pie!

We took this over to a friend’s house for dinner, and everyone enjoyed it. This served 4 people, and there was a fair bit left over. We left some with our friends, and had also had leftovers for dinner the next night.

1 quart of half & half – we were out! Price: $3.99
2 gallons of milk – on sale for $1.99, total price: $3.98
4 tubs of Gold ‘N Soft margarine – on sale for .99 cents each, used two $1.50/2 coupons from the 3/21 Smart Source newspaper inserts, which doubled – final price: Free plus four cents overage. I had two copies of this coupon because 3/21 was the week I found papers at Dollar Tree!
2 packages of Stayfree maxi pads – normally $3.49, used two $2/1 coupons from the 3/28 Red Plum newspaper inserts, which doubled; Final price: $1.98 for both. I did two coupon trades last week for 20 of these coupons, for which I paid a total of $4.50 in shipping & handling fees. Given that one package normally costs $3.49, I think this investment will provide me with a good savings.
2 Lunchables – on sale for $1.00, used two $1/1 coupons from the 3/21 Smart Source newspaper inserts. Final price: Free! I got these coupons during a recent trade.

I was happy about getting paid to buy the margarine – I don’t use it on sandwiches, but rather for baking. I’ve found that I can substitute margarine for butter in almost any baked good, even bread or hot cross buns, without it making a difference to the taste. People are surprised when I tell them that it’s not butter! (They almost “Can’t believe” it…I know, I know, bad joke.)

Garden Update: How Raccoons "Helped" Me Garden

So far, my efforts in container gardening have gone fairly well. Of course, there’s always setbacks – a cold snap killed off most of my plants a few months back, and now raccoons have decided to dig for treasure in the planters:

Here’s the really bizarre part. Jai had been trying to grow an avocado plant indoors, but it wasn’t doing too well. He decided to stick it in the planter a few months back, just for fun. Well, the raccoon dug it out of the first planter, carried it over to the second planter, and stuck it into a hole they dug. They were “Helping” me transplant it!

I made a quick run to Safeway & Rite Aid last Saturday to pick up supplies to make hot cross buns for Easter, as well as a few other things we were out of:

1 box of hair dye – price: $9.99
1 box of Olay makeup removers – regularly $6.49, used a $1/1 coupon from the 3/14 Red Plum newspaper inserts to bring the price down to $5.49. I’ve mentioned before how this is one of the few brands that I don’t have an allergic reaction to, so it’s worth the cost!

I made hot cross buns in the breadmaker for Easter using this recipe, and they turned out great! I took most of them to a family Easter brunch, and had a few left over to toast for breakfast on Monday morning. Yum!
